Best Recipes: Chocolate Chip Cheesecake

Have a little fun with your plain ole cheesecake by adding some yummy chocolate chips. Another great way to use our favorite chocolate morsels.

Crust

1 cup chocolate wafer crumbs


3 tablespoons margarine, melted

Filling

3 8-oz. pkgs. cream cheese, softened


? cup sugar


? cup flour


3 eggs


? cup sour cream


1 teaspoon vanilla


1 cup mini semi-sweet chocolate pieces

Directions

Preheat oven to 350 degrees.

Combine crumbs and margarine; press onto bottom of 9-inch springform pan. Bake at 350 degrees for 10 minutes.

Combine cream cheese, sugar and flour, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in sour cream and vanilla. Stir in chocolate pieces; pour over crust. Bake at 325 degrees for 55 minutes.

Loosen cake from rim of pan; cool before removing rim of pan. Chill. Garnish with whipped cream and red or green maraschino cherries.

Whether it?s a party, a quiet day in the house or just cruising downtown with friends, there?s always an occasion (or excuse) to gratuitously munch on chocolate.

Everyone loves chocolates, especially the types made from those secret vintage recipes. Listed below are a few of such.

CHOCOLATE JELLY WITH CRYSTALLIZED GREEN GAGES

Dissolve in a quart of water three tablespoonfuls of grated chocolate and let it come to a boil. Simmer for about ten minutes. Add a cup of sugar and a box of gelatin (that has been softened in a cup of water) and strain through a jelly bag or two thicknesses of cheese-cloth. When almost cold, add a dessertspoonful of vanilla and a tablespoonful of brandy. Then whisk well, add half a pound of crystallized green gages cut into small pieces and pour into a pretty mould. When cold serve with whipped cream.

Made from the roasted seeds of Theobroma cacao, the drink was flavored with a blend of exotic ingredients, and although Cortes had come to like this concoction, the Spanish eventually added sugar, vanilla, and cinnamon for a sweeter drink more pleasing to European taste. The secret recipe was eventually leaked to Europe, and first appeared in London in the mid-1600s. By 1765 the American colonists were enjoying cocoa made from West Indian beans. Did you know chocolate was originated in Central America? That it used to be a treat only to the rich? Chocolate has a fascinating history!

The Olmecs occupied a small area south of Veracruz and were the first cultivators of the cacao pod. The Mayans were next, just south of present day Mexico, to elevate chocolate to status of the Gods. They named the cacao tree Cacahuaquchtl (tree) as they were concerned no other tree was worth naming. They believed the tree belonged to the gods and that the pods growing from the tree were an offering from the gods to man. They Mayans were the originators of a bitter brew made from cacao beans. It was a luxury drink enjoyed by kings and noblemen. Thankfully we can all enjoy chocolate now!

Here?s a twist on the traditional chocolate brownies. Flip the script and make these delicious brownies made with real white chocolate. White Chocolate Brownies are a different, but equally yummy taste sensation. The chocolate chips sprinkled throughout, not only add traditional flavor, but make them look pretty too.

Directions

Preheat oven to 350 degrees.

Lightly grease an 8x8x2-inch baking pan; set aside.
